In fact, Andoni Goicoechea, founder of the business, confirmed to this newspaper that "a Goiko, in general, sells more than 100,000 euros a month, something not very common except in long-standing chains," and added that "we are going to finish with 16 openings in total, 12 from Goiko and three from Basics by Goiko in Spain, in addition to having resumed international expansion with our recent entry with Goiko in Andorra, which will be followed by Italy, which is about to arrive.
Delivery is an important part of the business. "Depending on the location, the proportion varies, but we have a ratio of 29% of billing for consumption outside the room," Goicoechea explained. Additionally, as a result of the pandemic, the billing model changed to 100% food delivery. "In the case of Basics and its blind kitchens, home delivery represents 50% of turnover," she added.
